Cynthia Kay's Pecan Pie Bars
2 cups of unsifted flour
1/2 cup confectioner's sugar
1 cup cold butter
1 can (14 oz) condensed milk
1 egg
1 teaspoon vanilla
1 (6 oz) package almond brickle chips or toffee chips
1 cup chopped pecans
Preheat oven to 350º. In mixing bowl, combine flour and sugar; cut in butter until mixture resembles coarse cornmeal. Press firmly on bottom of 9x13 pan. Bake 15 minutes.
Meanwhile, beat sweetened condensed milk, eggs and vanilla. Stir in chips and pecans. Spread evenly over baked crust. Bake 25 minutes or until golden brown. Cool. Chill thoroughly. Cut into bars. Store covered in refrigerator.
Author's Note: Cynthia Kay made these for Thanksgiving for Rheba to take to work for the Nurses to enjoy. Luckily, she saved us a few, and Oh My Word! Were they good!!
